Making the Roux
  1. Melt the butter in a saucepan
  2. Whisk in the flour until a paste forms
  3. Slowly stir in the milk until the roux thickens.
  4. Let stand for a few minutes
  5. Boil the sliced potatoes in a pot with salt and butter until theyre just about cooked.
The Potatoes
  1. Boil the sliced potatoes in a pot with salt and butter until theyre just about cooked.
  2. After the potatoes are ready, cost the bottom of your baking dish with butter to prevent sticking.
  3. Add one layer of potatoes, then add one half cup of shredded cheese, some pimento, and cayenne pepper.
  4. Repeat the process until the potatoes are gone, then top with more shredded cheese and pimento.
  5. Bake for 1 hour on 350.
  6. Let stand for 15 minutes. Serve.
